I can’t believe tomorrow is the Fourth of July already!! This year we will be keeping things very simple. We plan on just spending time in the backyard and grilling up some vegan hot dogs and hamburgers. I do want to whip up a dessert or two though. So I scoured the internet for some yummy but still healthy desserts. These are sure to get your mouth watering! I also created a summer dessert board on my Pinterest so if these aren’t your thing make sure to head over there and I’m sure you’ll be able to find something. Watermelon Pizza

Ingredients
- 1 watermelon
- 1 cup coconut yogurt (or greek yogurt for non-vegan)
- 1/2 cup strawberries, sliced in half
- 1/2 cup raspberries
- 1/2 cup cherries
- 1/2 cup blueberries
- 1/2 cup pomegranate seeds
- honey or maple syrup (optional)
Directions:
- Using a sharp knife, cut off a slice of watermelon right down the middle, about 2-3 inches thick.
- Using a spatula, spread an even layer of your yogurt around the watermelon leaving a bit of empty space at the top. (where your “pizza crust” is.)
- Layer your fresh fruit on top as you please. You can add as little or as many toppings as you like!
- Drizzle with honey or maple syrup for a little extra sweetness if desired
No-Bake Lemon Berry Cups

Ingredients
- 1 cup Greek yogurt, fat-free
- 1/2 cup (low-fat) cream cheese, softened
- Juice and zest of 1 lemon
- 2 tablespoons coconut sugar or raw sugar
- 1/4 cup chopped pecans
- 2 large pitted dates
- 1 cup fresh mixed berries
Directions
- Beat the yogurt with the cream cheese, lemon juice, zest and sugar until creamy and fluffy.
- Add pecans and dates to a food processor and process until a crumb consistency.
- Layer the yogurt, nuts, and fresh berries in small dessert cups. Sprinkle with additional pecans and lemon zest before serving.
Low Fat No-Bake Cheesecake

Ingredients
- 8 oz Cool Whip Free
- 8 oz reduced fat Philadelphia Cream Cheese
- 9 inch reduced fat Graham Cracker Crust
- 1/4 cup sugar
- 1 tsp lemon juice
Directions
- In a large bowl, whip cream cheese, lemon and sugar for a few minutes until fluffy. Add Cool Whip and whip until smooth.
- Spoon mixture into pie crust and chill for a few hours, until firm.
- Cut into 8 equal slices and serve.
