Hey all! I’m back with another recipe 🙂 This is seriously one of the quickest and easiest things you will ever make! There is one caveat and that is that you need a Vitamix blender. You can absolutely try this recipe with an immersion blender or a regular blender but I’m not too sure how the texture will turn out.
A Vitamix is a big investment but I honestly can’t recommend it enough. I have so many incredible Vitamix soup recipes I would love to share with you all. Because the Vitamix is so powerful you are able to get an incredibly smooth texture without the use of potatoes. I love this recipe because it is super quick, doesn’t require a lot of ingredients, and it is pretty low in calories since it is mostly just corn. You can get this chowder on the table in less than 10 minutes which is great when you are hungry and looking for something homemade but easy to whip up.
The measurements below are for 2 decent size bowls (you might be able to get 3 bowls out of it). Another thing that makes this recipe super easy is using frozen corn. I get a giant bag of frozen corn kernels at Costco which comes in super handy for this recipe. The secret ingredient I use in this recipe is honey. I find that it really intensifies the sweet flavor of the corn but the salt balances it out. If you want to make this recipe Vegan just use a non-dairy milk (I use almond) and skip the honey.

1. Fill a pot with 5 cups of water and 1/2 TB of salt. Bring to a boil. Add the frozen corn kernels and bring the water back to a boil. Boil for about 5 minutes.
2. Before draining the corn reserve 1/4 cup of water, you will need it for the soup.
3. Once the corn kernels are drained set aside 1/3 cup of kernels. Place the rest of the kernels into the Vitamix along with the rest of the ingredients. Blend on high speed for 30-45 seconds.
4. At this point test the chowder to see if it needs any extra seasoning. If everything is tasting good then it is time to pour your chowder into your bowls. Now carefully top your chowder with the corn kernels you set aside earlier.I think this makes for a pretty presentation but when it is time to dig in I always end up mixing it all together 🙂
